Creamy Parmesan Corn

Corn is one of those great veggies that is available all year round thanks to canning and freezing.  It's great just heated on its own with a little bit of salt and pepper, but sometimes its nice to have a little bit of variety, right?

Most creamed corn recipes call for sugar and heavy cream...but if you are looking for a recipe that doesn't have the added sugar, and also has a little less calories, or if you don't care for the traditional creamed corn, you might want to give this a try!  Corn is naturally sweet on its own, so this recipe does not call for any additional sugar...and you can use fat free half and half to cut down on the calories even more!  You can also sub the can of corn for frozen corn if you rather, and there are low sodium canned corn options available!

Fun fact:  Did you know there are actually 4 types of corn?  Field corn (used for livestock feed and many other items), sweet corn (which is the corn that we eat on the cob, canned, frozen in kernel form), popcorn (which cannot be GMO), and maize (the multicolored decorative corn)!
