Parmesan Herb Smashed Potatoes

Mashed, baked, french fried, chipped, pan fried...there are a lot of ways to do potatoes.  This one however, may be a favorite once you give it a try.  It really takes no more time than making baked potatoes in the oven, and offers a totally different flavor and texture to this root vegetable. 

This would go great with the steak with herbed butter if you have a meat and potato lover in the house...or it makes a great side dish for a lot of other meals as well!

Fun fact:  Potatoes are the top vegetable crops grown in the U.S. and are grown commercially in 30 states, with Idaho leading the way (which probably isn't a big suprise), followed by Washington, with Wisconsin, Colorado and North Dakota rounding out the top potato producing states!
