Beef Breakfast Burritos

Beef for breakfast??  You bet!  This recipe combines sirloin steak (you could also use some leftover steak if you have it...yes we know, that may be a rare occurance), with scrambled eggs, cheese and salsa for a Tex-Mex inspired breakfast that is nutritious and filling!

This recipe can also be adapted to prep ahead if you have company coming for breakfast and want something that can be ready quickly - just wrap the scrambled eggs, steak and cheese in the tortillas, and wrap all of that in aluminum foil.  In the morning, place the foil packages on a baking sheet and stick it in the oven at 350 for about 20 minutes, then serve with sour cream, salsa and cilantro to put on top!

Lean steak is a great source of protein that can help keep you feeling full longer, and combining it with eggs, cheese and the veggies in salsa is a great "power breakfast" to fill you up, provide lots of great nutrients, and taste great too!
