Stuffed Peppers

Fall is all about comfort food, and this recipe brings that feeling while still incorporating vegetables, meat and grains!

Using bell peppers (which come in a variety of different colors) as the "bowl" for this dish is a great way to encourage kids to eat more veggies.  Combine that with seasonsed ground beef and rice and you have a dish that is sure to fill you up, taste delicious and provide plenty of great nutrients!
